Cake
1 cup oil
1 cup sugar
2 cups self raising flour
2 cups finely grated raw carrot
3 eggs
1/2 tspn salt
1/3 tspn bicarbonate of soda
1/3 tspn baking powder
1/3 tspn cinnamon
1. Mix all ingredients in bowl, mix well
2. Line 2x9” round tins
3. Cook at 300oF (gas 3-4) for 30-50minutes
Icing
5oz cream cheese
10oz icing sugar
1/3 cup butter or margarine
1 1/2 tspn vanilla essence
1. Mix all ingredients in bowl, mix well
2. Add the icing to cake tops when cool

I have just started enjoying carrot cake because I used to not like the taste.
When I write the sign for a teaspoon, I do tsp, I do not tspn.
Does it make 3 layers, or does is make more?
The flavour of cakes that are my go to are the Lemon And Yoghurt Cake by Donna Hay or a friends recipe for a Chocolate Cake. Is this your go to cake?

DeleteIt is so delicious. I remember biking home from school when I was young to come home to find Mum had baked a fresh carrot cake ready for us to eat!
I even put the recipe on the New Brighton Seaside Market page to win a competition - there was lots of yummy recipes on there.

DeleteMy favourite type of cake would have to be lemon drizzle, as it just gets better by day and it is not that sweet either.
