Homemade Chicken Satay

I LOVE cooking from scratch. Tonight I made chicken satay.
—Satay Sauce: 1/2 can of coconut milk, 3 tbsp peanut butter, sprinkle of chilli flakes
—Chicken: 2 thighs
—Veg: spring onion, bean sprouts, coriander 
Cook off thigh cubes first, add sauce ingredients in the pan, add any veg you want!
Add rice/noodles etc!

  1. Yum, yum, yum!! Looks amazing. I thought I might try some new recipes while we have this time on our hands. Thanks for telling us how you made the sauce and loving the quantity of coriander on the top. Apparently you either like the taste of coriander or you don't, I am sooooo very pleased I do. Keep sharing and you have inspired me to do the same:-)

    1. Kia ora Ms Wilkinson,
      It's such an easy recipe and it is tasty too. If you like spice (I love spice!!) then just add extra chilli flakes or fresh chilli.
      I too LOVE coriander. My best friend however does not love it, infact it makes her feel quite sick.

    Your dinner looks delicious, I also love the amount of coriander there.
    At home, we have never made homemade satay before, except when I was younger, though I think when i was younger I used to find it disgusting, but now I love it!
    Some of my favourite recipes are wraps, really just anything Mexican.
    We use Nadia Lim for our recipes as they are healthy, easy and yummy.
    i think we have around 3 or 4 cookbooks! Do you have a favourite cookbook?
